The Scottish Centre for Food Development and Innovation (SCFDI) based at Queen Margaret University is spearheading an exciting research project aimed at developing a novel palm fat replacer. Funded by the UK government this initiative seeks to revolutionise food production with its innovative approach towards sustainability. With SCFDIs expertise in driving cutting edge solutions forward we can expect great things from PALM ALT!

The PALM-ALT project aims to provide an eco friendly alternative for palm oil which is commonly used in processed foods. While its versatility and affordability make it popular among manufacturers there are concerns about the negative impact on our environment caused by deforestation, greenhouse gas emissions and loss of biodiversity associated with its production. With this initiative we can create sustainable solutions that benefit both people and planet alike.

The PALM-ALT solution is a groundbreaking approach that combines linseed processing co product and beta glucan to create an alternative for palm fat. This innovative blend can be processed under specific conditions allowing it to mimic the functionality of palm oil while using healthier rapeseed oil instead. With this technology we have found yet another way to promote sustainability in our food production system.

The PALM-ALT project is currently in Phase 1 which aims to prove the technical feasibility of processing this ingredient mix into palm fat replacers and incorporating them into various bakery applications such as cakes, biscuits or oatcakes without using any palm oil.
